Vegan Matcha Pound Cake

If you adore matcha as much as do, this decadent vegan matcha pound cake with smooth icing glaze will quickly become one of your favourites! A beautiful symphony is created in your mouth by the divine marriage of a fluffy yet moist texture and the sweet and earthy aroma of matcha.

Ingredients

For the Matcha Pound Cake

  • 2 cups all-purpose flour
  • 2 tablespoons matcha green tea powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsweetened applesauce
  • 1/2 cup coconut oil, melted (or any neutral vegetable oil)
  • 1 cup unsweetened almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)

For the Glaze (optional)

  • 1 cup powdered sugar
  • 2 tablespoons unsweetened almond milk (or any plant-based milk)
  • 1/2 teaspoon matcha green tea powder

Instructions

For the Matcha Pound Cake

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a medium mixing bowl, whisk together the flour, matcha green tea powder, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, whisk together the granulated sugar, applesauce, melted coconut oil, almond milk, vanilla extract, and lemon zest (if using).
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 45-55 minutes, or until a toothpick or cake tester inserted into the center comes out clean. The exact baking time may vary, so keep an eye on it and adjust as needed.
  7. Remove the pound cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

For the Glaze (optional)

  1. In a small bowl, whisk together the powdered sugar, almond milk, and matcha green tea powder until you have a smooth glaze.
  2. Once the pound cake has cooled, drizzle the matcha glaze over the top.
  3. Allow the glaze to set for a few minutes before slicing and serving.
