Vegan Lava Cakes

Gluten free chocolate lava cake recipe took a little bit of perfecting to get the most oozing, gooey, eruption of 100% dairy free chocolate possible, it’s so incredibly simple to make, but everyone will think you’re a star baker. It’s also incredibly easy to make vegan, result!

Ingredients:

  • 1/2 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup vegan butter, melted
  • 1/2 cup plant-based milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Vegan dark chocolate, chopped into small pieces

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the all-purpose flour, almond flour, cocoa powder, granulated sugar, baking powder, and salt.
  3. Add the melted vegan butter, plant-based milk, and vanilla extract to the dry ingredients. Stir until well combined.
  4. Grease four ramekins with vegan butter or cooking spray. Divide the batter evenly among the ramekins.
  5. Add a few pieces of chopped dark chocolate to the center of each ramekin, then cover with more batter.
  6. Bake for 12-15 minutes, or until the edges are set and the center is still slightly jiggly.
  7. Let the lava cakes cool for a few minutes before running a knife around the edge and carefully turning them out onto plates.
  8. Serve warm and enjoy!
