Vegan Greek Salad with Nut Feta

Many people disagree that salads fill you up, but this one will persuade them all. The salad is ideal to bring on a trip, to work, or even to school.

Ingredients

  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

For the Nut Feta

  • 1 cup raw cashews, soaked in water for 4-6 hours and drained
  • 2 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon white miso paste
  • 2 tablespoons water
  • Salt to taste

Instructions

  1. In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, Kalamata olives, parsley, and mint.
  2. In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to coat.
  3. To make the Nut Feta, place the soaked cashews, nutritional yeast, lemon juice, apple cider vinegar, white miso paste, water, and salt in a blender or food processor. Blend until smooth and creamy.
  4. Add spoonfuls of the Nut Feta to the salad and gently toss to distribute it evenly.
  5. Serve the Vegan Greek Salad with Nut Feta immediately and enjoy!
