Vegan Galette With Blackberries

Refined sugar-free plum and blackberry galette is the ideal method to take advantage of the season’s stone fruit and berries. It’s the ideal treat for the whole family—crispy on the outside and gushing warm fruit juices inside. Enjoy it with ice cream or dairy-free yoghurt. vegan, gluten-free, and free of processed sugar.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup almond flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter, chilled and cubed
  • 3-4 tablespoons ice water
  • 2 nectarines, sliced
  • 2 plums, sliced
  • 1 cup blackberries
  • 2 tablespoons maple syrup (optional, for sweetness)
  • 1 tablespoon plant-based milk (for brushing)
  • 1 tablespoon coconut sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the all-purpose flour, almond flour, granulated sugar, and salt.
  3. Add the chilled vegan butter to the flour mixture. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Be careful not to overmix.
  5. Transfer the dough to a lightly floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for about 30 minutes.
  6. In the meantime, prepare the fruit. Slice the nectarines and plums, and rinse the blackberries.
  7. Remove the dough from the refrigerator and roll it out into a circle, about 1/8 inch thick.
  8. Transfer the rolled-out dough onto a parchment-lined baking sheet.
  9. Arrange the sliced nectarines, plums, and blackberries on top of the dough, leaving a border of about 2 inches.
  10. Drizzle the maple syrup over the fruit for extra sweetness (optional).
  11. Fold the edges of the dough over the fruit, pleating as you go to create a rustic look.
  12. Brush the edges of the dough with plant-based milk and sprinkle the coconut sugar on top.
  13. Bake in the preheated oven for about 30-35 minutes, or until the crust is golden brown and the fruit is tender.
  14. Remove from the oven and let it cool for a few minutes before serving.
