Vegan Crumble Balls With Pudding Filling

These vanilla pudding-filled sweet yeast balls have crumbles and powdered sugar on top. They make a fantastic, indulgent dessert that you can eat by yourself or with guests.

Ingredients

  • 1 cup rolled oats
  • 1 cup pitted dates
  • 1/2 cup almond flour
  • 1/4 cup cocoa powder
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup vegan pudding (any flavor of your choice)
  • Optional toppings: shredded coconut, crushed nuts, or cocoa powder for rolling

Instructions

  1. In a food processor, blend the rolled oats until they turn into a coarse flour-like consistency.
  2. Add the pitted dates, almond flour, cocoa powder, maple syrup, vanilla extract, and salt to the food processor. Blend until the mixture starts to come together and forms a sticky dough.
  3. Remove the mixture from the food processor and place it in a bowl.
  4. Take about a tablespoon of the dough and flatten it in your palm. Add a small spoonful of vegan pudding in the center of the flattened dough.
  5. Carefully wrap the dough around the pudding, shaping it into a ball. Repeat this process with the remaining dough and pudding.
  6. If desired, roll the crumble balls in shredded coconut, crushed nuts, or cocoa powder to coat them.
  7. Place the crumble balls in the refrigerator for at least 30 minutes to firm up before serving.
