Vegan Caramel Slice

You’ll adore these simple, whole-food-based vegan caramel slices that don’t require baking. This decadent dessert has a straightforward almond crust, dark chocolate, and gooey caramel. Each bite that can be shared has the ideal texture!

Ingredients

For the Base

  • 1 cup dates, pitted
  • 1 cup almonds (or other nuts of your choice)
  • 2 tablespoons cocoa powder
  • A pinch of salt

For the Caramel Layer

  • 1 cup dates, pitted and soaked in hot water for 10-15 minutes
  • 1/2 cup almond butter (or any nut butter)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • A pinch of salt

For the Chocolate Topping

  • 1/2 cup dairy-free chocolate chips
  • 1 tablespoon coconut oil

Instructions

For the Base

  1. In a food processor, blend the dates, almonds, cocoa powder, and a pinch of salt until the mixture sticks together when pressed.
  2. Press the mixture firmly into a lined baking dish (8×8 inch or similar).
  3. Place the dish in the freezer while you prepare the caramel layer.

For the Caramel Layer

  1. Drain the soaked dates and add them to the food processor along with almond butter, melted coconut oil, vanilla extract, and a pinch of salt.
  2. Blend until you have a smooth and creamy caramel-like mixture.
  3. Spread the caramel mixture over the prepared base layer in the baking dish. Use a spatula to smooth it out.
  4. Place the dish back in the freezer to set while you make the chocolate topping.

For the Chocolate Topping

  1. In a microwave-safe bowl or using a double boiler, melt the dairy-free chocolate chips and coconut oil together until smooth.
  2. Pour the melted chocolate over the caramel layer and spread it evenly.

Final Steps

  1. Return the dish to the freezer for a couple of hours or until the slices are firm.
  2. Once set, remove from the freezer and let it sit for a few minutes before slicing into squares or bars.
