Vegan Broccoli Croquettes With Herb Dip

These little broccoli croquettes, also known as broccoli tots, are delightfully seasoned and sure to please everyone. They are crispy on the exterior and soft on the inside.

Ingredients:

  • 250 ml lukewarm water
  • 1 tsp sugar
  • 1 tsp salt
  • 21 g fresh yeast or 7 g dry yeast
  • 500g flou
  • 200 g smoked tofu
  • 1 tbsp soy sauce
  • 5 drops Liquid Smoke (optional)
  • 1 red pepper
  • 10 dried tomatoes
  • 10 olives
  • 15 g dried oregano
  • Salt pepper
  • Marinara dip

Instructions:

  1. In a small bowl, mix the lukewarm water with the sugar and salt. Add or crumble in the yeast and stir.
  2. Put the flour in a large bowl and add the dissolved yeast. Wait about 10 minutes without stirring and let the yeast activate slowly. Then knead the dough well, cover with a damp cloth and leave to rise in a warm place for 45 minutes.
  3. In the meantime prepare the filling. Cut the smoked tofu into small cubes and fry vigorously in a pan with oil. After about 2 minutes, add the soy sauce and liquid smoke and fry for another 4-5 minutes. Then set aside.
  4. Wash the peppers and cut into small cubes. Drain the sun-dried tomatoes and olives and also cut into small pieces.
  5. When the dough has risen, add the filling and the oregano to the dough and knead in.
  6. Shape the dough into 8-10 evenly sized balls and place in a casserole dish or cast iron skillet. These should be well embedded beforehand.
  7. Cover with a kitchen towel and let rise again in a warm place for at least 30 minutes. Preheat the oven to 180°C circulating air.
  8. Bake in the oven at 180°C for about 30 minutes until the pizza buns are golden brown. Serve warm from the oven with the marinara dip.
