Vegan Banana Bread

This delicious, fragrant, and incredibly soothing banana bread is sugar-free! This delightful dessert is a must-try dish because it simply calls for a small number of simple and nutritious components. You’ve come to the perfect place if you’ve ever wanted to bake a quick, healthful dessert that smells divine.

Ingredients

  • 1 and 1/2 cups mashed ripe bananas (about 3-4 medium bananas)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plant-based milk (e.g., almond milk, soy milk)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat flour (or all-purpose flour if preferred)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1/2 cup chopped nuts (e.g., walnuts or pecans) (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas using a fork until smooth.
  3. Add the unsweetened applesauce, plant-based milk, melted coconut oil, and vanilla extract to the mashed bananas. Mix well until all the wet ingredients are combined.
  4. In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, ground cinnamon, and a pinch of salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay. If using chopped nuts, fold them into the batter.
  6. Pour the batter into the prepared loaf pan, spreading it evenly.
  7. Optional: You can decorate the top of the batter with some sliced banana or additional nuts.
  8. Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Once the banana bread is done baking, remove it from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  10. Slice and serve the sugar-free banana bread once it has cooled down.
