Vegan Avocados Burgers

Avocado halves serve as the bread for these burgers. They are a fun and low-carb way to serve burgers at your upcoming grilling party this summer.

Ingredients:

  • 4 ripe but firm avocados
  • 4 pineapple slices
  • Vegan mayo
  • Fresh cilantro
  • Lettuce leaves

For the green patty:

  • 1 can of chickpeas, drained and rinsed
  • 1/2 cup of oats
  • 1/4 cup of cilantro leaves
  • 1/4 cup of parsley leaves
  • 1/4 cup of chopped onion
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper

For the toppings:

  • Sliced red onion
  • Sliced tomato
  • Sliced avocado

Instructions:

  1. Start by making the green patty. In a food processor, pulse the chickpeas, oats, cilantro, parsley, onion, garlic, cumin, salt, and pepper until well combined. The mixture should be sticky and hold together.
  2. Divide the mixture into 4 equal portions and shape each into a patty.
  3. Heat a large skillet over medium-high heat. Add a little bit of oil and cook the patties for 3-4 minutes on each side until they are browned and crispy.
  4. Cut the avocados in half and remove the pit. Slice each half lengthwise into 3-4 slices.
  5. Grill the pineapple slices until they are charred and caramelized.
  6. To assemble the burgers, spread some vegan mayo on the bottom bun, add a lettuce leaf, a green patty, a slice of grilled pineapple, some sliced avocado, and a few sprigs of fresh cilantro. Top with the other bun.
  7. Serve the burgers with your favorite sides and enjoy!
