Turmeric Coconut Soup With Rice Noodles

This coconut soup contains all the beneficial ingredients. The ingredients in this dish are similar to a huge bowl of medication, but delicious: turmeric, ginger, chilli, lime juice, and mint. The hearty soup is simple to make and ready in under 30 minutes.

Ingredients

  • 1 tablespoon coconut oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon turmeric powder
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce or tamari (gluten-free option)
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar or coconut sugar
  • Salt and pepper to taste
  • 8 oz rice noodles
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat the coconut oil in a large pot over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
  2. Add the minced garlic, grated ginger, and turmeric powder to the pot. Stir and cook for another 1-2 minutes until fragrant.
  3. Pour in the coconut milk and vegetable broth. Stir well to combine all the ingredients. Bring the mixture to a gentle simmer.
  4. Add soy sauce (or tamari), lime juice, brown sugar (or coconut sugar), salt, and pepper to the pot. Stir to incorporate the flavors.
  5. Meanwhile, prepare the rice noodles according to the package instructions. Once cooked, drain and set aside.
  6. To serve, place a portion of rice noodles in each bowl and ladle the turmeric coconut soup over the noodles.
  7. Garnish with fresh cilantro leaves and serve with lime wedges on the side.
