Sweet Potato Kale Bites

These black bean, kale, and sweet potato pieces resemble miniature muffins. They make a terrific side dish that can be prepared ahead of time.

Ingredients

For the Sweet Potato Kale Bites

  • 2 medium sweet potatoes, peeled and grated
  • 2 cups fresh kale, finely chopped (stems removed)
  • 1/2 cup grated Parmesan cheese (or a dairy-free alternative for a vegan option)
  • 1/2 cup almond flour (or chickpea flour for a nut-free option)
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs (or flax eggs for a vegan option)
  • Olive oil for brushing

For the Dipping Sauce (optional)

  • 1/2 cup Greek yogurt (or dairy-free yogurt for a vegan option)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

For the Sweet Potato Kale Bites

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it with olive oil.
  2. In a large mixing bowl, combine the grated sweet potatoes, chopped kale, grated Parmesan cheese, almond flour, minced garlic, paprika, salt, and black pepper.
  3. In a separate small bowl, whisk the eggs (or flax eggs if using) and then add them to the sweet potato mixture. Mix everything until well combined.
  4. Using your hands or a spoon, scoop out portions of the mixture and shape them into bite-sized patties. Place them on the prepared baking sheet.
  5. Lightly brush the tops of the sweet potato kale bites with olive oil.
  6. Bake in the preheated oven for about 20-25 minutes, or until the bites are golden brown and crispy on the outside and cooked through.

For the Dipping Sauce (optional)

  1. While the bites are baking, prepare the dipping sauce. In a small bowl, whisk together the Greek yogurt, lemon juice, honey (or maple syrup), Dijon mustard, salt, and pepper until smooth.
  2. Once the sweet potato kale bites are done, remove them from the oven and let them cool for a few minutes.
  3. Serve the Sweet Potato Kale Bites warm with the optional dipping sauce on the side.
