St. Patty’s Day Green Eggs

Serves 1
This recipe might look a little funny, but it tastes great, and is a good way to get a protein and veggie packed breakfast!

Ingredients:
• 2 eggs
• 1 C fresh spinach or baby kale, rinsed and dried
• 1 small clove garlic
• 1⁄2 tsp sea salt
• 1 TB olive or avocado oil

Directions:

  1. Combine the first four ingredients in a blender and blend until combined.
  2. Place oil in a small skillet and swirl to coat the skillet. Heat over medium, and then add the egg mixture once hot. Cook for 3-4 minutes; turning eggs frequently, until they are just set.
  3. Taste and adjust seasonings, then serve.
  4. For extra green, serve with a slice of whole-grain avocado toast!
