Spicy Chickpea and Vegetable Stir-Fry with Peanut Sauce

Elevate your mealtime with the Spicy Chickpea and Vegetable Stir-Fry with Peanut Sauce—a vegan-friendly dish that harmoniously combines the protein-packed goodness of chickpeas, the creaminess of avocado, and a burst of fresh vegetables. This flavorful stir-fry not only offers a quick and satisfying meal option but also delivers a nutrient-rich experience that will leave your taste buds and body nourished.

Ingredients:

For the Stir-Fry:

  • 2 cans (15 oz. each) chickpeas, drained and rinsed
  • 2 cups broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium carrot, julienned
  • 1 cup snap peas, ends trimmed
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons sesame oil
  • Salt and pepper to taste
  • Red pepper flakes (optional for extra spice)

For the Peanut Sauce:

  • 1/3 cup creamy peanut butter
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • Water (as needed to reach desired consistency)

Instructions:

  1. Prepare the Peanut Sauce:
    • In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, sesame oil, and minced garlic.
    • Add water gradually to achieve the desired consistency. Set aside.
  2. Stir-Fry:
    • Heat sesame oil in a large wok or skillet over medium-high heat.
    • Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
    • Add chickpeas to the wok and stir-fry for 5-7 minutes until they start to brown and crisp.
  3. Add Vegetables:
    • Add broccoli, red bell pepper, yellow bell pepper, carrot, and snap peas to the wok.
    • Stir-fry for an additional 5-7 minutes until the vegetables are tender-crisp.
  4. Combine with Peanut Sauce:
    • Pour the prepared peanut sauce over the stir-fried chickpeas and vegetables.
    • Toss everything together until evenly coated in the peanut sauce.
  5. Adjust Seasoning:
    • Season with salt, pepper, and red pepper flakes (if using) according to your taste.
  6. Serve:
    • Garnish with sliced green onions.
    • Serve the spicy chickpea and vegetable stir-fry over cooked rice, quinoa, or your favorite grain.
