Sesame Stir-Fried Udon with Crispy Tofu

Elevate your mealtime with Sesame Stir-Fried Udon with Crispy Tofu—a delightful fusion of flavors and textures that brings together the savory goodness of tofu, the crunchiness of spring onions, and the nuttiness of sesame seeds. This vegan-friendly dish offers a quick and satisfying meal option that will tantalize your taste buds and leave you craving for more.

Ingredients:

  • 400g block firm tofu
  • 1 tbsp cornflour
  • ½ -1 tsp chilli flakes, to taste
  • ¼-½ tsp Szechuan peppercorns, ground, to taste
  • 1 tbsp vegetable oil
  • Bunch of spring onions, trimmed and cut into lengths
  • 200g green beans, trimmed and cut into lengths
  • 400g ready-to-use thick udon noodles
  • ½ tbsp sesame oil
  • 2 tsp sesame seeds, plus a pinch to serve
  • 1 tbsp low-salt soy sauce, plus extra to serve
  • 1 tbsp rice vinegar

Instructions:

1.Prepare the Tofu:
• Drain and pat the tofu dry with kitchen paper. Cut into cubes and wrap in more kitchen paper. Place a heavy board over the top and leave to drain for 15 mins.

2. Coat the Tofu:
• Mix cornflour, chilli flakes, ground peppercorns, and a pinch of salt in a bowl. Add the drained tofu and toss well to coat.

3.Fry the Tofu:
• Heat half the vegetable oil in a large non-stick frying pan over high heat. Fry the tofu pieces for 5-6 mins until golden all over. Drain on kitchen paper.

4.Stir-Fry the Vegetables:
• Add the remaining oil to the pan and stir-fry the spring onions and beans for 3-4 mins until tender and lightly golden.

5.Cook the Noodles:
• Pour boiling water over the noodles in a sieve to loosen. Drain well and add to the pan. Fry for a few minutes until piping hot.

6.Add Seasonings:
• Add sesame oil, sesame seeds, soy sauce, and rice vinegar to the pan. Toss well.

7. Serve:
• Serve the stir-fried udon with crispy tofu in bowls. Garnish with a pinch of sesame seeds and serve with extra soy sauce on the side.
