Mediterranean Veggie Sandwich

Savor the flavors of the Mediterranean with this delicious and wholesome Veggie Sandwich. Packed with vibrant vegetables, creamy hummus, and tangy tzatziki sauce, this sandwich is a delightful combination of fresh ingredients and bold flavors. Whether you’re looking for a quick lunch or a satisfying meal on the go, this Mediterranean-inspired sandwich is sure to please your taste buds.

Ingredients:

  • 4 slices whole grain bread
  • 1/2 cup hummus
  • 1/2 cup tzatziki sauce
  • 1 small cucumber, thinly sliced
  • 1 medium tomato, thinly sliced
  • 1/2 cup sliced red bell pepper
  • 1/2 cup sliced red onion
  • 1/2 cup mixed salad greens (such as lettuce or spinach)
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup crumbled feta cheese (optional)
  • Salt and black pepper, to taste
  • Fresh basil leaves, for garnish (optional)

Instructions:

1. Toast the Bread (Optional):

If desired, lightly toast the slices of whole grain bread until golden brown. This step is optional but can add extra texture to your sandwich.

2. Prepare the Hummus and Tzatziki:

Spread a generous layer of hummus on two slices of bread and tzatziki sauce on the other two slices. Ensure an even spread to cover the entire surface of each slice.

3. Layer the Vegetables:

On the slices of bread spread with hummus, layer the cucumber slices, tomato slices, sliced red bell pepper, red onion slices, mixed salad greens, and sliced Kalamata olives. Season with salt and black pepper to taste.

4. Optional Feta Cheese:

If using crumbled feta cheese, sprinkle it evenly over the vegetable layers for an extra burst of flavor.

5. Assemble the Sandwich:

Carefully place the slices of bread spread with tzatziki sauce on top of the vegetable layers, creating two sandwiches.

6. Slice and Serve:

Using a sharp knife, slice each sandwich in half diagonally to create triangular halves. Garnish with fresh basil leaves if desired. Serve immediately and enjoy!
