Mediterranean Chickpea Salad:

Ingredients:

  • 1 (14-oz) can chickpeas/garbanzo beans, drained and rinsed
  • 1⁄2 C cucumber, chopped
  • 1⁄2 C cherry tomatoes, chopped
  • 1⁄2 C yellow bell pepper, chopped
  • 1⁄4 C kalamata olives, pitted and chopped
  • 1 TB fresh oregano, chopped, or 1 tsp dried
  • 1 TB fresh dill, chopped, or 1 tsp dried
  • 1 TB red wine vinegar
  • 2 tsp Dijon mustard
  • 1 TB olive oil
  • 1 tsp sea salt
  • 1 tsp freshly ground pepper
  • 3 C salad greens, washed and dried

Instructions:

1. In a small bowl, whisk together the red wine vinegar, Dijon mustard, olive oil, herbs, sea salt and pepper to make the dressing.

2. Place the salad greens in a large bowl and top with chickpeas/garbanzo beans and chopped vegetables. Drizzle the dressing over the top of the salad, taste, and add more seasoning if needed before serving.
