Matcha Popsicles

We now have coconut milk and matcha popsicles! Matcha flavour that is creamy and delicious is encased in a cool, dairy-free popsicle.

Ingredients

  • 2 teaspoons matcha green tea powder
  • 1 can (13.5 oz) full-fat coconut milk (chilled)
  • 1/4 cup maple syrup or agave nectar (adjust to taste)
  • 1 teaspoon vanilla extract
  • Optional: Matcha powder or shredded coconut for garnish

Instructions

  1. In a small bowl, whisk the matcha green tea powder with a couple of tablespoons of warm water until it forms a smooth paste. Allow it to cool.
  2. In a blender, combine the chilled coconut milk, matcha paste, maple syrup (or agave nectar), and vanilla extract. Blend until everything is well combined.
  3. Taste the mixture and adjust the sweetness if needed by adding more maple syrup or agave nectar.
  4. Pour the matcha coconut mixture into popsicle molds.
  5. If you want to add a decorative touch, sprinkle a small amount of matcha powder or shredded coconut on top of each popsicle.
  6. Insert popsicle sticks into the molds.
  7. Place the molds in the freezer and freeze for at least 4-6 hours or until the popsicles are completely frozen.
  8. Once frozen, remove the popsicles from the molds by running them under warm water for a few seconds to loosen them.
  9. Serve and enjoy your Matcha Popsicles with Coconut Milk!
