Easy Vegan Chickpea Meatballs

This recipe for vegan meatballs is simple to prepare, rich in protein, and flavorful. A fantastic weeknight plant-based supper.

Ingredients:

  • 1 can of chickpeas, drained and rinsed
  • 1/2 cup of breadcrumbs
  • 1/4 cup of ground flaxseed
  • 1/4 cup of nutritional yeast
  • 2 cloves of garlic, minced
  • 1 tablespoon of Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a food processor, blend the chickpeas, breadcrumbs, flaxseed, nutritional yeast, garlic, Italian seasoning, salt, and pepper until well combined.
  3. Roll the mixture into balls and place them on a baking sheet.
  4. Drizzle the olive oil over the meatballs.
  5. Bake for 25-30 minutes, or until golden brown.
