Creamy Noodle and Pumpkin Casserole

To prepare a simple Pumpkin Pasta Sauce, combine a few ingredients with pumpkin puree. For a creamy and delectable supper, serve it over fettuccine, penne, spaghetti, or any of your favourite noodles!

Ingredients:

  • 8 oz uncooked egg noodles
  • 1 can (15 oz) pure pumpkin puree
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground nutmeg
  • 1/4 cup breadcrumbs
  • 1 tbsp butter, melted

Instructions:

  1. Preheat the oven to 375°F.
  2. Cook the egg noodles according to the package instructions. Drain and set aside.
  3. In a large mixing bowl, whisk together the pumpkin puree, heavy cream, Parmesan cheese, minced garlic, dried thyme, salt, black pepper, and ground nutmeg until smooth.
  4. Add the cooked egg noodles to the mixing bowl and toss until the noodles are fully coated in the pumpkin mixture.
  5. Transfer the noodle mixture to a 9×13 inch baking dish.
  6. In a small bowl, mix together the breadcrumbs and melted butter. Sprinkle the breadcrumb mixture over the top of the noodle mixture.
  7. Bake the casserole for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
  8. Serve hot and enjoy!
