Coconut Macaroons

Make these easy coconut macaroons with just a handful of ingredients. These classic bakes are ideal for filling your biscuit tin or enjoying with a cup of tea.

Ingredients:

  • 4 large egg whites
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 cups sweetened shredded coconut

Instructions:

  1. Preheat the oven to 350°F (177°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk the egg whites, sugar, salt, and vanilla extract until combined.
  3. Stir in the shredded coconut until well combined.
  4. Using a tablespoon or cookie scoop, drop the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 15-18 minutes or until golden brown.
  6. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
