Broccoli Walnut Brain Booster Salad

This recipe is high in healthy fats from the walnuts and olive oil, which can support brain health. Broccoli is also a great source of vitamin K, which can improve cognitive function, and dietary fiber, which can support gut health. The raisins and honey add a touch of sweetness without adding refined sugar.

Ingredients:

  • 1 head of broccoli, chopped into small florets
  • 1/2 cup walnuts, chopped
  • 1/4 cup raisins
  • 1/4 cup red onion, diced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the chopped broccoli, chopped walnuts, raisins, and diced red onion.
  2. In a separate mixing bowl, whisk together the apple cider vinegar, honey, Dijon mustard, olive oil, salt, and pepper.
  3. Pour the dressing over the broccoli mixture and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
