Baked Apple Cider Donuts

These Baked Apple Cider Donuts have a crispy cinnamon sugar topping and are fluffy and delicate. The perfect combination of sweet and spicy! Oil-free, vegan, and gluten-free. Every bite of these Baked Apple Cider Donuts tastes like fall! A soft and supple cider-infused donut topped with an extra crispy cinnamon sugar coating is an unbeatable flavour and textural combination.

Ingredients

For the donuts

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup apple cider
  • 1/4 cup non-dairy milk (e.g., almond, soy, oat)
  • 2 tbsp melted coconut oil or vegetable oil
  • 1 tsp vanilla extract

For the cinnamon sugar coating

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 2-3 tbsp melted vegan butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix together the applesauce, apple cider, non-dairy milk, melted coconut oil or vegetable oil, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring until just combined. Do not overmix.
  5. Spoon the batter into a piping bag or a plastic storage bag with the corner cut off. Pipe the batter into the greased donut pan, filling each cavity about 2/3 full.
  6. Bake in the preheated oven for about 12-15 minutes or until a toothpick inserted into a donut comes out clean.
  7. While the donuts are baking, prepare the cinnamon sugar coating. In a bowl, mix together the granulated sugar and ground cinnamon.
  8. Once the donuts are done baking, remove them from the oven and let them cool for a few minutes. Then, carefully remove them from the pan.
  9. Brush each donut with melted vegan butter and roll them in the cinnamon sugar mixture until coated.
