Apricot Balls

A wonderful no-bake treat are these apricot balls with cashews, dates, and coconut. With healthy ingredients like apricots, cashews, coconut, citrus zest, dates, and spices, they’re incredibly quick and simple to make. They are excellent for hiking or whenever you need a quick energy boost and are gluten-free, paleo, and vegan.

Ingredients

  • 1 cup dried apricots, soaked in warm water for 15 minutes and drained
  • 1/2 cup pitted dates
  • 1/2 cup raw cashews
  • 1/2 cup shredded coconut, plus extra for coating
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt (optional)

Instructions

  1. In a food processor, combine the soaked and drained apricots, pitted dates, raw cashews, shredded coconut, vanilla extract, and salt (if using).
  2. Pulse the mixture until it forms a sticky, uniform dough-like consistency. You may need to scrape down the sides of the food processor and pulse again to ensure everything is well combined.
  3. Scoop out portions of the mixture and roll them into bite-sized balls.
  4. Roll the balls in shredded coconut to coat them evenly.
  5. Place the apricot balls on a tray or plate and refrigerate for about 30 minutes to firm them up.
  6. Once chilled, the apricot balls are ready to serve. Store any leftovers in an airtight container in the refrigerator.
