Chocolate Gingerbread Cake

With the addition of chocolate and  ginger—ground, fresh, and crystallized—this warm spiced loaf cake is made even cosier. Slices of this gingerbread should be served with a small amount of vanilla ice cream for a quick and pleasant dessert.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup dark brown sugar
  • 1/2 cup unsalted butter, at room temperature
  • 2 large eggs
  • 1/2 cup molasses
  • 1/2 cup boiling water
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, ginger, cinnamon, nutmeg, and cloves.
  3. In a large bowl, cream together the brown sugar and butter until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the molasses.
  5. Gradually stir in the dry ingredients, mixing until just combined.
  6. In a separate small bowl, stir together the boiling water, baking soda, and salt.
  7. Add the water mixture to the batter and stir until well combined.
  8. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool completely before slicing and serving.
