Smashed Pea Toast

The recipe for smashed pea toast is incredibly simple, healthful, and flavorful. For breakfast or as a sophisticated starter, spread it on bread with sprouts!

Ingredients:

  • 2 slices of whole grain bread
  • 1 cup frozen peas, thawed
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp lemon juice
  • Optional toppings: feta cheese, sliced avocado, fresh herbs

Instructions:

  1. Toast the slices of bread until crispy.
  2. In a medium bowl, add the thawed peas, olive oil, garlic powder, salt, and pepper. Mash the peas with a fork until they are well combined but still slightly chunky.
  3. Add the lemon juice to the bowl and stir to combine.
  4. Spread the mashed pea mixture evenly onto the toasted bread slices.
  5. Add any desired toppings, such as feta cheese, sliced avocado, or fresh herbs.
  6. Serve and enjoy!
