Saucy Garlic Butter Beans

A rich, velvety, and satisfying dish packed with protein and flavor—perfect for a cozy meal or a hearty side!

Ingredients

For the Butter Beans:

  • 2 ½ cups cooked butter beans (or 2 cans, drained and rinsed)
  • 2 tbsp olive oil or vegan butter
  • 4 cloves garlic, minced
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¾ cup vegetable broth

For the Creamy Sauce:

  • ⅓ cup unsweetened dairy-free milk (almond, oat, or soy)
  • 1 ½ tbsp nutritional yeast (for a subtle cheesy note)
  • 2 tsp Dijon mustard
  • 1 ½ tsp cornstarch (optional, for thickness)

For Serving:

  • Thick slices of toasted sourdough or rustic bread
  • 1 tbsp chopped fresh parsley (for garnish)
  • Red pepper flakes (optional, for heat)

Instructions

  1. Sauté the garlic & beans:
    • Warm olive oil in a pan over medium heat.
    • Add garlic and cook for 1-2 minutes until fragrant.
    • Stir in the butter beans, smoked paprika, salt, and black pepper.
    • Cook for 4-5 minutes, stirring occasionally, to infuse the flavors.
  2. Make it creamy:
    • Pour in the vegetable broth and let it simmer for about 3 minutes.
    • In a separate bowl, whisk together the dairy-free milk, nutritional yeast, Dijon mustard, and cornstarch.
    • Stir the mixture into the pan and cook for another 2-3 minutes, until thick and creamy.
  3. Serve & enjoy:
    • Spoon the creamy butter beans over toasted bread.
    • Garnish with fresh parsley and red pepper flakes for extra flavor.

Tips:

  • Add a splash of lemon juice for brightness.
  • Stir in baby spinach or kale for added greens.
  • Use full-fat coconut milk for an extra indulgent version
