Mango Coconut Chia Pudding

Indulge in a tropical delight with Mango Coconut Chia Pudding—a luscious combination of creamy coconut milk, sweet mango, and nutritious chia seeds. This vegan-friendly dessert offers a refreshing and satisfying treat that’s perfect for any time of day.

Ingredients:

  • 1 ripe mango, peeled and diced
  • 1 can (400ml) coconut milk
  • 1/4 cup chia seeds
  • 2 tbsp maple syrup or agave nectar
  • 1/2 tsp vanilla extract
  • Fresh mint leaves, for garnish (optional)

Instructions:

  1. Prepare the Mango Puree:

Place the diced mango in a blender or food processor. Blend until smooth. Set aside.

  1. Mix Chia Seeds:

In a mixing bowl, combine chia seeds, coconut milk, maple syrup or agave nectar, and vanilla extract. Stir well to combine. Let it sit for 5 minutes, then stir again to prevent clumping.

  1. Layer Ingredients:

In serving glasses or jars, alternate layers of mango puree and chia seed mixture. Start with a layer of mango puree, followed by a layer of chia seed mixture, and repeat until glasses are filled.

  1. Chill:

Cover the glasses or jars with plastic wrap or lids and refrigerate for at least 2 hours, or preferably overnight, to allow the chia seeds to thicken and set.

  1. Serve:

Once chilled and set, remove the mango coconut chia pudding from the refrigerator. Garnish with fresh mint leaves if desired. Serve chilled and enjoy!
