Vegan Grilled Cheese Sandwich

Do you enjoy scrumptious vegan sandwiches? You must try this nutritious vegan grilled cheese that is made with natural ingredients. Avocado, spinach, and sprouts are sandwiched between cashew mayo and a nutritious homemade cheese sauce to create the best vegan grilled cheese sandwich ever! For the entire family, prepare this whole-food plant-based dish.

Ingredients

  • 4 slices whole-grain bread
  • 1 cup cooked or canned chickpeas, drained and rinsed
  • 1/4 cup nutritional yeast
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon turmeric powder (optional, for color)
  • Salt and pepper to taste
  • 1/2 cup baby spinach leaves
  • 1 small tomato, thinly sliced
  • 4 slices vegan cheese (store-bought or homemade)
  • 1 tablespoon olive oil (for grilling)

Instructions b

  1. In a food processor, combine the chickpeas, nutritional yeast, lemon juice, garlic powder, onion powder, turmeric powder (if using), salt, and pepper. Pulse until you get a slightly chunky, spreadable mixture resembling a hummus texture. This will be your vegan cheese spread.
  2. Take two slices of whole-grain bread and spread the vegan cheese mixture on one side of each slice.
  3. Layer the baby spinach leaves, tomato slices, and vegan cheese slices on one of the bread slices. Top with the other bread slice, spread side down, to form a sandwich.
  4. In a skillet or griddle, heat the olive oil over medium heat.
  5. Place the vegan grilled cheese sandwich on the skillet and cook for about 3-4 minutes on each side, or until the bread becomes golden brown and crispy, and the vegan cheese inside melts.
  6. Once both sides are grilled to your desired level of crispness, remove the sandwich from the skillet and let it cool for a moment before slicing it in half.
  7. \Serve immediately and enjoy your healthy vegan grilled cheese sandwich!
