Yogurt Bark With Fruit And Granola

We all yearn for a cold and mouthwatering delicacy to sate our sweet desire when the temperature rises and the hot summer days draw near. Why not try a healthier alternative like this frozen yoghurt bark instead of grabbing for ice cream?

Ingredients

  • 2 cups plain Greek yogurt (or dairy-free yogurt for a vegan version)
  • 2 tablespoons honey (or maple syrup for a vegan version)
  • 1 teaspoon pure vanilla extract
  • 1 cup mixed fresh fruits (e.g., berries, kiwi, mango, etc.), chopped into small pieces
  • 1/4 cup granola (use gluten-free granola if you prefer)
  • Optional toppings: shredded coconut, chia seeds, sliced almonds, etc.

Instructions

  1. In a bowl, mix together the Greek yogurt, honey (or maple syrup), and vanilla extract until well combined.
  2. Line a baking sheet or a flat tray with parchment paper.
  3. Spread the yogurt mixture onto the lined baking sheet, creating an even layer, about 1/4 to 1/2 inch thick.
  4. Sprinkle the chopped mixed fruits and granola evenly over the yogurt layer. You can also add optional toppings like shredded coconut, chia seeds, or sliced almonds if desired.
  5. Gently press the fruits and granola into the yogurt to ensure they stick.
  6. Place the baking sheet in the freezer and freeze for at least 2-3 hours, or until the yogurt bark is completely frozen and firm.
  7. Once frozen, remove the bark from the freezer and break it into pieces using your hands or a knife.
  8. Serve immediately or store the frozen yogurt bark in an airtight container in the freezer.
