Coconut Almond Bliss Balls

These coconut almond bliss balls are utterly crowd-pleasing and created with only a few nutritious pantry essentials. They are soft, chewy, and melt-in-your-mouth delectable. This delightfully nutty and inherently sweet delicacy is great for carrying along and using as a healthy snack or meal prep item.

Ingredients

  • 1 cup dates, pitted
  • 1 cup almonds
  • 1/2 cup unsweetened shredded coconut
  • 2 tablespoons coconut oil
  • 1 tablespoon cacao powder (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a food processor, combine dates, almonds, shredded coconut, coconut oil, cacao powder (if using), vanilla extract, and salt.
  2. Process the mixture until it forms a sticky dough-like consistency. If the mixture is too dry, you can add a small amount of water (1-2 tablespoons) to help bind it together.
  3. Once the mixture is well combined, take small portions and roll them into bite-sized balls.
  4. Roll each ball in some extra shredded coconut to coat the exterior.
  5. Place the bliss balls in an airtight container and refrigerate for at least 30 minutes to firm up.
