Kinpira Gobo (Spicy Burdock Root and Carrot Stir-fry)

Kinpira Gobo, a delectable side dish of carrot and burdock root in a sauce of soy, mirin, and sake, is stir-fried to perfection, and also vegan-friendly

Ingredients:

  • 1 burdock root (about 300g)
  • 1 carrot (about 150g)
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tsp sugar
  • 1 tsp chili flakes
  • 1 tbsp sesame seeds

Instructions:

  1. Peel the burdock root and carrot and cut them into thin matchsticks.
  2. Soak the burdock root in water for a few minutes to remove any bitterness.
  3. Heat the sesame oil and vegetable oil in a pan over medium heat.
  4. Add the burdock root and carrot and stir-fry for about 5 minutes.
  5. In a small bowl, mix together the soy sauce, mirin, sake, sugar, and chili flakes.
  6. Add the sauce to the pan and stir-fry for another 5-10 minutes, or until the vegetables are tender and the sauce has thickened.
  7. Sprinkle sesame seeds over the top and serve hot.
