Zesty Vegan Lemon Coconut Energy Balls

A refreshing, no-bake snack bursting with tangy lemon and creamy coconut—perfect for an on-the-go energy boost.

Ingredients:

Energy Balls:

  • 1 cup almond flour
  • 1/2 cup shredded unsweetened coconut
  • 2 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • Zest of 1 lemon
  • Juice of 1/2 lemon (adjust for desired tartness)
  • 1/2 tsp vanilla extract
  • Pinch of salt

Optional Toppings:

  • Extra shredded coconut for rolling
  • Lemon zest for garnish

Instructions:

  1. Mix the Dough:
    • In a mixing bowl, combine almond flour, shredded coconut, lemon zest, and a pinch of salt.
    • Add melted coconut oil, maple syrup, lemon juice, and vanilla extract. Stir until the mixture holds together when pressed.
  2. Shape the Balls:
    • Scoop out about 1 tablespoon of dough at a time and roll it into a ball. Repeat with the remaining mixture.
  3. Optional Coating:
    • Roll each ball in shredded coconut for a decorative touch.
  4. Chill:
    • Place the energy balls on a plate or in an airtight container. Chill in the refrigerator for at least 30 minutes to firm up.
  5. Serve:
    • Enjoy straight from the fridge for a refreshing pick-me-up!

Tips:

  • Add 1–2 tbsp of chia seeds or hemp seeds for extra nutrients.
  • Swap almond flour with oat flour for a nut-free version.
  • Store in an airtight container in the fridge for up to a week.
