Originally from the French town of Commercy, madeleines are a type of delicate pastry made with sand mass. They are often made using flour, granulated sugar, eggs, butter, rum, baking soda, and lemon zest (source). So without further ado, we tried a few different things to substitute all the animal products while maintaining the flavour and texture.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup almond milk (or any other non-dairy milk)
- 1/4 cup melted coconut oil (or any other vegetable oil)
- 1 teaspoon vanilla extract
- Zest of 1 lemon (optional)
- Powdered sugar and dark chocolate
- Almonds for dusting
Instructions
- Preheat your oven to 375°F (190°C). Grease a madeleine pan with vegan cooking spray or a light coating of oil.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- Add the almond milk, melted coconut oil, vanilla extract, and lemon zest (if using). Stir until the batter is smooth and well combined.
- Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
- Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown and the tops spring back when lightly touched.
- Remove the madeleines from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust the madeleines with powdered sugar. Serve and enjoy!
