Ingredients
- Rice paper wrappers
- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1 cup julienned cucumber
- 1 cup julienned bell peppers
- 1 cup sliced avocado
- Fresh herbs (such as mint, cilantro, or basil)
- Salt and pepper to taste
- Water for soaking rice paper wrappers
Instructions
- Prepare all the vegetables and set them aside.
- Fill a large shallow dish with warm water.
- Dip one rice paper wrapper into the warm water for a few seconds until it becomes pliable.
- Lay the rice paper wrapper on a clean surface.
- Place a small amount of each vegetable in the center of the wrapper.
- Add some fresh herbs, salt, and pepper on top of the vegetables.
- Fold the sides of the wrapper over the filling and roll it tightly from bottom to top, like a burrito.
- Repeat the process with the remaining wrappers and filling.
- Serve the vegan winter rolls with quince dip.
Quince Dip
- 2 medium-sized quinces, peeled, cored, and diced
- 1/4 cup maple syrup or agave nectar
- 1/4 cup water
- 1 tablespoon lemon juice
Instructions
- In a saucepan, combine the diced quinces, maple syrup or agave nectar, water, and lemon juice.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer for about 20 minutes or until the quinces are soft.
- Remove from heat and let it cool slightly.
- Transfer the mixture to a blender or food processor and blend until smooth.
- Adjust the sweetness or tartness by adding more maple syrup or lemon juice, if desired.
- Pour the quince dip into a serving bowl and let it cool completely before serving.
