Vegan Winter Rolls with Quince Dip

For a nutritious vegetarian or vegan lunch, prepare Vegetable Winter Rolls with a quince dipping sauce. Eat colourful, delicious, fresh vegetables! Vietnamese rice paper rolls are another name for these. Each crisp bite is flavor-packed, with the sauce adding the perfect amount of savoury sweetness heat to the soft rice wrappers.

Ingredients

  • Rice paper wrappers
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cup julienned cucumber
  • 1 cup julienned bell peppers
  • 1 cup sliced avocado
  • Fresh herbs (such as mint, cilantro, or basil)
  • Salt and pepper to taste
  • Water for soaking rice paper wrappers

Instructions

  1. Prepare all the vegetables and set them aside.
  2. Fill a large shallow dish with warm water.
  3. Dip one rice paper wrapper into the warm water for a few seconds until it becomes pliable.
  4. Lay the rice paper wrapper on a clean surface.
  5. Place a small amount of each vegetable in the center of the wrapper.
  6. Add some fresh herbs, salt, and pepper on top of the vegetables.
  7. Fold the sides of the wrapper over the filling and roll it tightly from bottom to top, like a burrito.
  8. Repeat the process with the remaining wrappers and filling.
  9. Serve the vegan winter rolls with quince dip.

Quince Dip

  • 2 medium-sized quinces, peeled, cored, and diced
  • 1/4 cup maple syrup or agave nectar
  • 1/4 cup water
  • 1 tablespoon lemon juice

Instructions

  1. In a saucepan, combine the diced quinces, maple syrup or agave nectar, water, and lemon juice.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer for about 20 minutes or until the quinces are soft.
  3. Remove from heat and let it cool slightly.
  4. Transfer the mixture to a blender or food processor and blend until smooth.
  5. Adjust the sweetness or tartness by adding more maple syrup or lemon juice, if desired.
  6. Pour the quince dip into a serving bowl and let it cool completely before serving.
