Any summer dinner will be made more vibrant by this recipe for fresh tzatziki! It tastes great on pita, grilled vegetables, sandwiches, and more! Rich, creamy, and full of fresh herbs!
Ingredients:
- 1 cup unsweetened vegan yogurt
- 1/2 cup grated cucumber (about 1/2 a medium cucumber)
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
- Salt and black pepper, to taste
Instructions:
- Begin by grating the cucumber and squeezing out the excess moisture. You can use a paper towel or a clean dish towel to do this.
- In a mixing bowl, combine the grated cucumber, minced garlic, lemon juice, chopped dill, and vegan yogurt. Mix well.
- Season with salt and black pepper, to taste.
- Chill the tzatziki in the refrigerator for at least 30 minutes before serving.
