You are aware of how great of a team we are. That doesn’t mean, of course, that we avoid salads, fruit, and vegetables. On the contrary, though! Every meal aims to have as much fruit and veg as possible! For us, they don’t preclude one another. The clearest illustration of this is our spring pizza, which not only comes with a tonne of fresh veggies and herbs but is also hearty and healthy after a long day at the office.
Ingredients
- 1 pre-made pizza dough (store-bought or homemade)
- 1/2 cup green pesto
- 1 cup baby spinach
- 1/2 cup asparagus, trimmed and cut into small pieces
- 1/2 cup green peas
- 1/4 cup sliced red onion
- 1/4 cup sliced cherry tomatoes
- 1/4 cup sliced black olives
- 1/2 cup vegan cheese (such as vegan mozzarella or a dairy-free cheese of your choice)
- Fresh basil leaves for garnish
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven according to the instructions on the pizza dough package.
- Roll out the pizza dough on a lightly floured surface to your desired thickness.
- Transfer the rolled-out dough onto a baking sheet or pizza stone.
- Spread the green pesto evenly over the pizza dough, leaving a small border around the edges.
- Layer the baby spinach, asparagus, green peas, red onion, cherry tomatoes, and black olives on top of the pesto.
- Sprinkle the vegan cheese over the toppings.
- Season with salt and pepper to taste.
- Drizzle a little olive oil over the pizza.
- Place the pizza in the preheated oven and bake according to the pizza dough package instructions, or until the crust is golden and the toppings are cooked.
- Remove from the oven and let it cool for a few minutes.
- Garnish with fresh basil leaves.
- Slice and serve the vegan spring pizza.
