A decent buffet shouldn’t be without sandwich appetisers! If you disagree that they are vegan, we will demonstrate two variants to you today that will satisfy even non-vegan visitors: tuna cream and carrot salmon sandwich nibbles that are vegan! Because it takes longer than you anticipate, give yourself ample time to construct the miniature turrets. Resting is quite simple.
Ingredients
For the “Salmon” filling:
- 1 can of chickpeas, drained and rinsed
- 2 tablespoons nutritional yeast
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh dill
- 1 tablespoon capers
- 1 tablespoon nori flakes (for the fishy taste)
- Salt and pepper to taste
For the “Tuna” filling:
- 1 can of white beans, drained and rinsed
- 2 tablespoons vegan mayo
- 1 tablespoon dijon mustard
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped red onion
- 1 tablespoon capers
- 1 teaspoon kelp powder (for the fishy taste)
- Salt and pepper to taste
For the sandwich bites:
- Sliced bread (whole grain or your preferred choice)
- Fresh lettuce leaves
- Sliced cucumber
- Sliced tomato
Instructions
- Prepare the “Salmon” filling: In a mixing bowl, mash the chickpeas using a fork or potato masher until they resemble a flaky texture. Add nutritional yeast, tahini, lemon juice, chopped dill, capers, nori flakes, salt, and pepper. Mix well to combine. Adjust seasonings according to your taste.
- Prepare the “Tuna” filling: In another mixing bowl, mash the white beans until they are slightly chunky. Add vegan mayo, dijon mustard, chopped parsley, chopped red onion, capers, kelp powder, salt, and pepper. Mix well to combine. Adjust seasonings as desired.
- Assemble the sandwich bites: Take a slice of bread and spread a layer of the “Salmon” filling on one side. Take another slice of bread and spread a layer of the “Tuna” filling on one side. Place a lettuce leaf, cucumber slices, and tomato slices on top of the filling. Top with the other slice of bread, filling side down. Repeat this process to make more sandwich bites.
- Cut the assembled sandwiches into bite-sized pieces, such as triangles or squares, depending on your preference.
