With mouthwatering additions like tomatoes, peppers, and vegan chorizo, you won’t want to eat anything else again, whether you want to adopt a plant-based diet, have a dairy intolerance or just want a healthier option.
Ingredients
- 1 cup raw cashews, soaked in water for 4-6 hours and drained
- 1 cup unsweetened plant-based milk (such as almond, soy, or cashew milk)
- 1/4 cup nutritional yeast
- 2 tablespoons cornstarch
- 2 tablespoons fresh lemon juice
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/4 teaspoon turmeric (optional, for color)
- Salt to taste
- Optional toppings: chopped jalapenos, diced tomatoes, chopped cilantro
Instructions
- In a blender or food processor, combine the soaked cashews, plant-based milk, nutritional yeast, cornstarch, lemon juice, tomato paste, smoked paprika, garlic powder, onion powder, cumin, turmeric (if using), and salt. Blend until smooth and creamy.
- Transfer the mixture to a saucepan and heat over medium heat, stirring constantly, until the queso dip thickens and becomes hot. This should take about 5-7 minutes.
- Once the dip reaches a desired consistency, remove from heat and let it cool slightly.
- Serve the vegan queso dip warm with your favorite tortilla chips or veggies. You can also top it with chopped jalapenos, diced tomatoes, or chopped cilantro for added flavor.
