Ingredients
For the dumplings
- 1 cup mashed potatoes (cooled)
- 1 1/2 cups all-purpose flour
- 1/4 cup ground poppy seeds
- 2 tablespoons powdered sugar
- 1/4 teaspoon salt
- 1/4 cup plant-based milk (such as almond, soy, or oat)
- 1 teaspoon vanilla extract
For the plum sauce
- 1 pound plums, pitted and halved
- 1/4 cup granulated sugar (adjust to taste)
- 1/2 cup water
- 1/2 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
For the dumplings
- In a large mixing bowl, combine the mashed potatoes, all-purpose flour, ground poppy seeds, powdered sugar, and salt. Mix well.
- Add the plant-based milk and vanilla extract to the mixture. Knead the dough until it comes together. If the dough is too sticky, add a little more flour; if it’s too dry, add a touch more milk.
- Divide the dough into equal portions and roll them into small balls, about 1 to 1.5 inches in diameter.
- Bring a large pot of water to a boil. Carefully add the dumplings to the boiling water. Cook for about 5-7 minutes or until they float to the surface. Remove them with a slotted spoon and place them on a plate.
For the plum sauce
- In a saucepan, combine the halved plums, granulated sugar, water, lemon juice, and vanilla extract. Stir well.
- Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for about 10-15 minutes or until the plums are soft and the sauce thickens. Stir occasionally.
- Remove the plum sauce from heat and let it cool slightly.
- Using a blender or immersion blender, puree the plum mixture until smooth. If the sauce is too thick, you can add a bit of water to reach your desired consistency.
To serve
Place the vegan poppy seed dumplings on a plate and drizzle them with the plum sauce. You can also garnish with additional ground poppy seeds or a sprinkle of powdered sugar if desired.
