These homemade oreo cookies taste quite similar to the real chocolate creme-filled sandwich cookies and are easy to make. Perfect for dipping in a glass of oat milk or almond milk, or for use in desserts such as this vegan oreo cheesecake.
Ingredients
For the Chocolate Cookies
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup vegan butter, softened
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
- 1 teaspoon vanilla extract
- Pinch of salt
For the Vegan Oreo Filling
- 1/2 cup vegan butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, cocoa powder, and a pinch of salt.
- In a separate large bowl, cream together the softened vegan butter and granulated sugar until smooth and creamy.
- Add the flaxseed mixture (flax egg) and vanilla extract to the butter-sugar mixture, and mix until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients and mix until a dough forms. The dough should be slightly sticky but workable.
- Roll out the dough on a lightly floured surface to a thickness of about 1/8 inch.
- Use a round cookie cutter or the rim of a glass to cut out small cookie circles. Place them on the prepared baking sheet, leaving some space between each cookie.
- Bake the chocolate cookies in the preheated oven for about 8-10 minutes or until they are firm to the touch.
- Remove the cookies from the oven and let them cool completely on a wire rack.
- While the cookies are cooling, prepare the vegan Oreo filling. In a bowl, beat the softened vegan butter until creamy.
- Gradually add the powdered sugar and vanilla extract to the butter, and continue beating until the filling is smooth and fluffy.
- Once the cookies have cooled, spread a generous amount of the vegan Oreo filling on the flat side of one cookie.
- Sandwich another cookie on top, pressing gently to create the Homemade Oreo cookie.
- Repeat the process with the remaining cookies and filling.
