This Vegan Cordon Bleu is packed with vegan gammon and cheese, covered with bread crumbs and baked to absolute crispiness! It takes 35 minutes to prepare and is simple to do.
Ingredients:
- 1 cup of cooked quinoa
- 1/2 cup of finely chopped mushrooms
- 1/2 cup of finely chopped onion
- 1/2 cup of panko breadcrumbs
- 1/4 cup of nutritional yeast
- 1/4 cup of flour
- 1 tsp of garlic powder
- 1 tsp of paprika
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 1/2 cup of unsweetened plant-based milk
- 1 tbsp of apple cider vinegar
- 8 slices of vegan ham or seitan
- 8 slices of vegan cheese
- 1 tbsp of olive oil
Instructions:
- Preheat the oven to 375°F.
- In a bowl, combine the cooked quinoa, mushrooms, onion, panko breadcrumbs, nutritional yeast, flour, garlic powder, paprika, salt, and black pepper.
- In another bowl, mix the plant-based milk and apple cider vinegar.
- Cut the vegan ham or seitan into small pieces.
- Take a small amount of the quinoa mixture and flatten it into a disc shape. Place a piece of vegan ham or seitan and a slice of vegan cheese in the center. Fold the edges of the quinoa mixture over the ham and cheese to create a ball shape.
- Dip the ball into the plant-based milk mixture and then coat it with the remaining quinoa mixture.
- Place the balls on a baking sheet lined with parchment paper and brush them with olive oil.
- Bake in the preheated oven for 20-25 minutes, or until golden brown.
