For us vegans, there are some classics that are difficult to give up. We always loved lobster rolls, so pleasantly pleased by how simple it was to recreate one with the exact same flavours and textures in a vegan version.
Ingredients
- 1 pound hearts of palm, drained and rinsed (substitute with artichoke hearts if hearts of palm are unavailable)
- 1/2 cup vegan mayonnaise
- 2 tablespoons fresh lemon juice
- 2 celery stalks, finely chopped
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh dill, chopped
- Salt and pepper to taste
- 4 vegan hot dog buns or rolls
- 2 tablespoons vegan butter, melted
- Lettuce leaves for serving
Instructions
- Using a knife, chop the hearts of palm into small pieces, resembling the texture of lobster meat.
- In a mixing bowl, combine the chopped hearts of palm, vegan mayonnaise, lemon juice, celery, red onion, and dill. Mix well until all the ingredients are evenly coated. Season with salt and pepper to taste.
- Heat a skillet or griddle over medium heat. Brush the sides of the buns with melted vegan butter.
- Toast the buns in the skillet until they become golden brown and slightly crispy on the outside.
- Remove the toasted buns from the skillet and line them with lettuce leaves.
- Spoon the hearts of palm mixture onto each bun, filling them generously.
- Serve immediately and enjoy your delicious Vegan Lobster Roll!
