Ingredients:
- 1 box of lasagna noodles
- 1 jar of vegan tomato sauce (24 oz)
- 1 can of crushed tomatoes (28 oz)
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup of sliced mushrooms
- 1 package of vegan ground beef (12 oz)
- 1 package of vegan mozzarella cheese (8 oz)
- 1/2 cup of nutritional yeast
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F.
- Cook the lasagna noodles according to package instructions, then set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté for 2-3 minutes until fragrant.
- Add the diced red bell pepper, zucchini, and sliced mushrooms to the skillet and cook for 5-7 minutes until they are tender.
- Add the vegan ground beef to the skillet and cook for 5-7 minutes until it is heated through.
- Add the crushed tomatoes and tomato sauce to the skillet and stir to combine. Season with salt and pepper to taste.
- In a separate bowl, mix together the vegan mozzarella cheese and nutritional yeast.
- To assemble the lasagna, spread a layer of the tomato sauce mixture on the bottom of a 9×13 inch baking dish. Add a layer of lasagna noodles, then a layer of the cheese mixture. Repeat the layers until all of the ingredients are used up.
- Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
