Vegan Kofte

The ideal summertime barbecue recipe is these vegan and gluten-free Greek style koftas. These are incredibly tasty, fragrant, and quick to make!

Ingredients:

  • 1 cup cooked brown lentils
  • 1/2 cup cooked quinoa
  • 1/2 cup chopped parsley
  • 1/2 cup chopped green onions
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped fresh mint
  • 1/4 cup chickpea flour
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the cooked lentils, cooked quinoa, parsley, green onions, tomatoes, and mint.
  3. Add the chickpea flour, cumin, paprika, garlic powder, salt, and black pepper, and mix well.
  4. Shape the mixture into 12 equal-sized balls and flatten them slightly into the shape of a patty.
  5. Heat olive oil in a large skillet over medium heat.
  6. Add the kofte patties to the skillet and cook until browned on both sides, about 2-3 minutes per side.
  7. Transfer the kofte patties to a baking sheet lined with parchment paper and bake in the oven for 10-12 minutes.
