Ingredients:
- 1 cup cooked brown lentils
- 1/2 cup cooked quinoa
- 1/2 cup chopped parsley
- 1/2 cup chopped green onions
- 1/2 cup chopped tomatoes
- 1/4 cup chopped fresh mint
- 1/4 cup chickpea flour
- 1 tbsp ground cumin
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions:
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the cooked lentils, cooked quinoa, parsley, green onions, tomatoes, and mint.
- Add the chickpea flour, cumin, paprika, garlic powder, salt, and black pepper, and mix well.
- Shape the mixture into 12 equal-sized balls and flatten them slightly into the shape of a patty.
- Heat olive oil in a large skillet over medium heat.
- Add the kofte patties to the skillet and cook until browned on both sides, about 2-3 minutes per side.
- Transfer the kofte patties to a baking sheet lined with parchment paper and bake in the oven for 10-12 minutes.
