Vegan Kinder Maxi King

A traditional Kinder Maxi King is made of chocolate with crunchy hazelnuts and milk cream that is sandwiched between wafer layers. There is a liquid caramel core in the centre. We frequently veganize many sweets and snacks, so we created a vegan version of Kinder Maxi King this time.

Ingredients

  • 1 cup raw cashews, soaked in water for at least 4 hours
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup pitted dates, soaked in hot water for 10 minutes and drained
  • 1/4 cup almond butter
  • 1/4 cup unsweetened almond milk
  • 1/2 cup desiccated coconut
  • 1/4 cup roasted peanuts, chopped

For the chocolate coating

  • 1 cup dairy-free dark chocolate chips
  • 1 tablespoon coconut oil

Instructions:

  1. Drain the soaked cashews and rinse them well. Place them in a food processor or high-speed blender.
  2. Add the maple syrup, melted coconut oil, vanilla extract, cocoa powder, and salt to the food processor or blender. Blend until smooth and creamy, scraping down the sides as needed.
  3. Line a square baking dish with parchment paper. Pour the cashew mixture into the dish and spread it out evenly. Place the dish in the freezer for about 30 minutes, or until the mixture is firm.
  4. In the meantime, prepare the filling by combining the dates, almond butter, and almond milk in the food processor or blender. Blend until smooth.
  5. Remove the cashew mixture from the freezer and spread the date filling evenly on top. Sprinkle the desiccated coconut and chopped peanuts over the filling, pressing them lightly into the mixture.
  6. Return the dish to the freezer for another 30 minutes, or until the filling is set.
  7. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring each time, until the chocolate is melted and smooth.
  8. Remove the dish from the freezer and cut the mixture into small rectangular bars, similar to the shape of Maxi King.
  9. Using a fork or toothpick, dip each bar into the melted chocolate, ensuring it’s fully coated. Place the coated bars on a parchment-lined baking sheet.
  10. Once all the bars are coated, return the baking sheet to the freezer for about 10 minutes, or until the chocolate is set.
  11. Vegan Kids Maxi Kings are now ready to be enjoyed! Store them in an airtight container in the refrigerator for up to one week.
