Many people disagree that salads fill you up, but this one will persuade them all. The salad is ideal to bring on a trip, to work, or even to school.
Ingredients
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
For the Nut Feta
- 1 cup raw cashews, soaked in water for 4-6 hours and drained
- 2 tablespoons nutritional yeast
- 2 tablespoons lemon juice
- 2 tablespoons apple cider vinegar
- 1 tablespoon white miso paste
- 2 tablespoons water
- Salt to taste
Instructions
- In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, Kalamata olives, parsley, and mint.
- In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to coat.
- To make the Nut Feta, place the soaked cashews, nutritional yeast, lemon juice, apple cider vinegar, white miso paste, water, and salt in a blender or food processor. Blend until smooth and creamy.
- Add spoonfuls of the Nut Feta to the salad and gently toss to distribute it evenly.
- Serve the Vegan Greek Salad with Nut Feta immediately and enjoy!
