Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup almond flour
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1/2 cup vegan butter, chilled and cubed
- 3-4 tablespoons ice water
- 2 nectarines, sliced
- 2 plums, sliced
- 1 cup blackberries
- 2 tablespoons maple syrup (optional, for sweetness)
- 1 tablespoon plant-based milk (for brushing)
- 1 tablespoon coconut sugar (for sprinkling)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the all-purpose flour, almond flour, granulated sugar, and salt.
- Add the chilled vegan butter to the flour mixture. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Be careful not to overmix.
- Transfer the dough to a lightly floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for about 30 minutes.
- In the meantime, prepare the fruit. Slice the nectarines and plums, and rinse the blackberries.
- Remove the dough from the refrigerator and roll it out into a circle, about 1/8 inch thick.
- Transfer the rolled-out dough onto a parchment-lined baking sheet.
- Arrange the sliced nectarines, plums, and blackberries on top of the dough, leaving a border of about 2 inches.
- Drizzle the maple syrup over the fruit for extra sweetness (optional).
- Fold the edges of the dough over the fruit, pleating as you go to create a rustic look.
- Brush the edges of the dough with plant-based milk and sprinkle the coconut sugar on top.
- Bake in the preheated oven for about 30-35 minutes, or until the crust is golden brown and the fruit is tender.
- Remove from the oven and let it cool for a few minutes before serving.
