Ingredients
- 4 small vegan flatbreads or pitas
- 1 cup balsamic onions (see below for instructions)
- 1 cup sliced fresh figs
- 1 cup vegan cheese, grated (optional)
- Fresh basil leaves, for garnish
- Salt and pepper, to taste
For the balsamic onions:
- 2 large red onions, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- To make the balsamic onions, heat olive oil in a pan over medium heat. Add the sliced onions and cook until they start to soften and caramelize, about 10-15 minutes. Stir occasionally to prevent burning.
- Reduce the heat to low and add balsamic vinegar, salt, and pepper to the pan. Cook for an additional 5 minutes until the onions are coated in the balsamic glaze. Remove from heat and set aside.
- Place the flatbreads or pitas on a baking sheet. If desired, lightly brush them with olive oil for extra crispiness.
- Spread a layer of balsamic onions on each flatbread. Top with sliced figs and sprinkle vegan cheese, if using.
- Season with salt and pepper to taste. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the flatbreads are crispy and the cheese is melted (if using).
- Remove from the oven and let them cool slightly. Garnish with fresh basil leaves.
- Serve the vegan flatbread mini pizzas warm as an appetizer or main dish.
