Breakfast with a vegan egg in a hole is scrumptious and appealing. Making it simply takes a few minutes, yet it never fails to impress. Serve it for brunch or eat it any weekday morning.
Ingredients
- 2 slices of bread (whole wheat or your preferred type)
- 1/4 cup Just Egg (or other vegan egg substitute)
- Vegan butter or oil for cooking
- Salt and pepper to taste
- Fresh herbs or spices for garnish (optional)
Instructions
- Use a round cookie cutter or a glass to cut a hole in the center of each bread slice. Keep the cut-out circles for toasting.
- Heat a non-stick skillet over medium heat and add a small amount of vegan butter or oil.
- Place the bread slices in the skillet and let them toast for a minute or two on one side.
- Flip the bread slices over and pour about half of the Just Egg into the holes in the bread.
- Season with a pinch of salt and pepper.
- Allow the “egg” to cook for 2-3 minutes until it starts to set.
- Gently flip the bread slices over, being careful not to break the “egg” in the hole.
- Cook for an additional 2-3 minutes, or until the “egg” is cooked to your desired level of doneness.
- While the bread is cooking, you can toast the cut-out circles of bread alongside the slices.
- Once the “egg” is cooked, remove the bread slices from the skillet.
