The ideal holiday sweet treat is this delightfully sweet, tender, and moist Date Bread with chopped pecans! It is produced without any butter, oil, dairy, processed sugar, or gluten, but it is still wonderfully tasty!
Ingredients
- 1 cup pitted dates, chopped
- 1 cup boiling water
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ cup granulated sugar or a sweetener of your choice (e.g., coconut sugar, maple syrup)
- ¼ cup vegetable oil (e.g., canola oil, coconut oil)
- 1 tsp vanilla extract
- ½ cup chopped nuts (e.g., walnuts, pecans) – optional
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan.
- Place the chopped dates in a bowl and pour the boiling water over them. Let them soak for about 10 minutes to soften.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- In another bowl, mix the sugar, vegetable oil, and vanilla extract until well combined.
- Gradually add the dry flour mixture to the wet mixture, stirring until just combined.
- Fold in the soaked dates and chopped nuts (if using).
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
